I want to build a lab to emulate an Mpls network, any ideas?

You can use dynamips/gns3 with 7200 routers as P/PE.

yep, agree,

GNS3 would be best, create a core network with 7200 routers, assign them as P routers or PE routers.

What MPLS application are you interested in seeing?  Which signalling protocol do you want to use?  Do you want traffic engineering?  Route reflectors?  Confederations?  BGP and MPLS are both very expansive topics.  Please be more specific and I will provide sample configurations.
